Do you like Starbucks sous vide egg bites? These are not your typical egg bites, they look like fluffy soufflés and are creamy, rich flavor and delicious. That’s all thanks to the precision of sous vide cooking.
In recent years, I’ve been researching how to cook eggs better, and Starbucks inspired me to try recreating them at home. Guys, it’s super easy - all you need is eggs, milk and cheese. My sous vide egg bites recipe is the same as what you’ll find at Starbucks, and I promise they taste even better.
Ingredients:
- 4 large eggs
- 1/2 cup cottage cheese or cream cheese
- 1/4 cup shredded Cheddar, Monterey Jack, or Gruyère cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

- Sous vide immersion circulator
- Mason jars
- Large pot or container for water bath
- Blender
Why Sous Vide Egg Bites?
Sous vide cooks food evenly and preserve flavor with a water bath set to a specific temperature. Eggs can easily be overcooked, but using a sous vide cooker can ensure that the egg bites are cooked to a perfectly soft, creamy texture every time. Plus, since the temperature is controlled consistently, you can expect the same great results with each attempt.
How to Make Sous Vide Egg Bites?
I tried different cooking times and temperatures, and I finally created egg bites that are just as good as Starbucks’ - maybe even better! It’s super easy to make, and I’ve laid out the steps for you so you won’t miss anything.
Step 1: Preheat your sous vide machine
Grab a big pot or container, fill it with water, and hook up your sous vide machine. Set the temperature to 172°F (78°C) for that perfect custard-like consistency.
Step 2: Prepare and mix all ingredients
In a blender, blend the eggs, cottage cheese, cheese, salt and pepper until smooth. Then, prepare any toppings you like. For instance, fry the bacon slices until crispy, cook the mushrooms until soft-tender, and chop up some spinach.
Step 3: Assemble the egg bites
Put the bacon in two jars, the spinach and mushrooms in another two, and chilli flakes in the remaining two. Pour the egg mixture in, leaving some space at the top. Seal the jars with lids or aluminum foil to prevent water from getting inside.
Step 4: Sous vide egg bites
Carefully place the jars into the preheated water bath. Set the timer for 45 minutes, which will give the egg bites a creamy texture. If you like them a bit firmer, you can extend the cooking time to up to 60 minutes, according to your preference.
Step 5: Finish and serve
Once cooked, take the jars out of the water bath and let them cool for a few minutes to release the remaining pressure before unscrewing the lids. After cooling down, you can use a butter knife to pop them out of the jars, or if you used a mold, just gently push the sides to get them out. Enjoy the sous vide egg bites while they are still warm, either on their own or topped with fresh herbs or salsa.
Egg Bites Recipe Variations
You can spice up the basic egg bites by adding different ingredients to mix things up. I’ve tried with a few additions and put together some tasty recipes that I think you’ll love.
Classic Spinach and Feta Egg Bites:
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup milk or cream
- Salt and pepper to taste
- Optional: a pinch of red pepper flakes for heat
Tomato Basil and Mozzarella Egg Bites:
- 6 large eggs
- 1/2 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup milk
- Salt and pepper to taste
Sausage and Bell Pepper Egg Bites
- 6 large eggs
- 1 cup cooked breakfast sausage, crumbled
- 1/2 cup bell peppers (red, green, or a mix), diced
- 1/4 cup onion, diced
- 1/4 cup milk
- Salt and pepper to taste
Sweet Potato and Kale Egg Bites
- 4 large eggs
- 1 cup cooked sweet potato, mashed
- 1/2 cup kale, chopped
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Optional: shredded cheese of choice
Spicy Chorizo and Cheddar Egg Bites
- 6 large eggs
- 1/2 cup chorizo, cooked and crumbled
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup milk
- 1/2 tsp smoked paprika
- Salt and pepper to taste
How to Store and Reheat Leftovers?
Leftover sous vide egg bites can be stored in the refrigerator for about 3 days. In the freezer, they’ll last up to 6 months. If you have a jar or container that can be used to vacuum seal, you can extend the shelf life of egg bites to 1 week in the refrigerator and 1-2 years in the freezer by using a vacuum sealer machine. To reheat, just microwave the egg bites stored in refrigerator on medium heat for 30-60 seconds. For frozen ones, use the thaw mode and heat for 90 seconds, then give them another 30 seconds on medium.
